add UTF8 support - how ?

Hi,
i've installed the Apache2Triad package (mysql+apache+php) and have been playing with php+mysql for a couple of weeks now.
My question is regarding UTF8 support, since i need my php app and mysql to support both english and hebrew.
what do i need to do to set mysql to support UTF8 as a default (meaning without having to specifically create tables with different charsets and collactions than the default)
