So, the solution was to downgrade the ODBC Connector to version 5, as per this helpful post:
https://www.experts-exchange.com/questions/28925521/Access-2016-linked-to-MySQL-ODBC-call-failed-randomly.html

MySQL/ODBC 8 just doesn't work with Access.
