I wound up fixing the issue by installing mysql-connector-odbc-8.0.21-winx64
to use MySQL ODBC 8.0 Unicode Driver, and when I did that, I was able to confirm that the x86 64-bit drivers were found under SysWOW64\odbcad32.exe , and, thus, everything now works just fine
