I'm sorry. I failed to mention that my C# application is a WinForm. The WinForm that has nothing but a "GO" button and an INSERT statement.
My guess is along the lines of your idea, that I need to tell either C#, the .NET Connector, or MySQL that the data is coming across as utf-8. I don't know where or how to do that, though.
