MySQL and Unicode character sets

I have seen at
http://dev.mysql.com/doc/mysql/en/charset-cyrillic-sets.html
that there are many possibilities. Is the best to give into code MySQL on server
Unicode character sets as I will have International customers and also Eastern Europe customers?
