Pleae help .... need to search for "Any" criteria

I have a running php program that will search for 4 individual criteria i.e. country, area, type and capacity ... which works fine. BUT I would like to be able for the user to be able to enter "Any" in each field to be able to search on all countries and/or all areas and/or all types and/or all capacities.
Could you please help as I am pulling my hair out and I haven't got much left as it is :)
