How do you specify ' as a Enclosed by Character?

Hey All

We are trying to migrate data from an SQL Anywhere Unload file to MySQL but we are getting a syntax error and we suspect it is with the ENCLOSED BY Statment. The fields are ENCLOSED BY a ' but when we put ''' to specify it we get a syntax error. Is this how you tell MySQL that the fields are enclosed by a '?

Thanks
