The response was somewhere in the documentation.
It was a problem with the new version of MySQL 4.1 (the tables were copied from an old version to this new one)
To avoid this problem, I have created all the tables with scripts in the new server and with default character set set to utf8 for each table (default database is latin1)
After that, I imported the data and than attached the table in access and everything is all right
