You cannot link an Access Project to any other SQL server than the MS SQL server.
Unless perhaps someone manages to simulate everything required from MS SQL - which at least in it's current case and beleive no one plans such support - is not the case.

Under normal circumstances you would create a normal Access Database, but instead of creating the databases in Access you would link them (File -> Get External Data -> Link Tables...) Make sure you have the MyODBC 3.51 driver installed first, then create a user/system DSN to point to the MySQL server. In the Dialog which the menu options open, select the "Files of type" option "ODBC Databases", then select the DSN you've exposed.
