Il y a une manière de faire bien expliquée sur stackoverflow : http://stackoverflow.com/questions/10253605/import-csv-to-update-only-one-column-in-table

L'inconvénient est que ça ne passe pas par phpMyAdmin, il faut aller jouer directement en SQL.
