Ich habe heute anscheinend das Problem lösen können...
Es lag daran, dass alle Tabellen die mit AUTO_INCREMENT angelegt waren, einfach nicht den Wert erhöhten...
Beim Umstellen vom MYSQL 5.6 auf 8.0 wurde AUTO_INCREMENT so eingestellt, dass es erst nach 24 Stunden (das war ja auch meine Anmerkung) die Werte erhöhte.
Ich habe mit dem Befehl:
SET PERSIST information_schema_stats_expiry = 0;
das Problem gelöst! jetzt erhöht er den Auto_incremnet Wert sofort.
