Hola, gracias por todo.
Al final detecté que al reinstalar el mysql se quedó de forma residual el fichero de configuración /etc/my.cnf. Hice una reinstalación eliminando ficheros de /var/lib/mysql, /etc/mysql i ese fichero.
Todo correcto.
