Ok thanks for your answer.

And don't be worry, we don't do anything with some strange like % with some strange char. But for me it will be the best test to measure performance.

So we are going with the unicode_ci.

We change all our database during the night from Wednesday to Thursday.

I will keep you inform, but I'm sure we are going with the right encodage.
