UTF-8 problem

Hi,

Unfortunately I do not know much about databases. I am trying to set up a small online store with oscommerce using English and Hungarian. I converted everything I could to utf-8 encoding and everything is working fine except my database doesn't display the correct Hungarian characters. I changed the collations to utf-8. On the website and the administration site I have the correct characters but in the database I don't. If I edit them manually to the correct ones in the database, I get question marks on the administration pages. If I change them back to the right ones there they change back to the wrong ones in the database again.
I am on a unix server, using osCommerce Online Merchant v2.2 RC2a and PHP Version 5.2.6
Can someone take me through to fix this in plain english if possible?
