Yikes!

I found no occurrance in any of the .cnf files so added it to these

/etc/mysql/conf.d/mysql.cnf
/etc/mysql/conf.d/mysqldump.cnf

and it stopped all access to the server with
mysql: [ERROR] unknown variable 'default_authentication_plugin=mysql_native_password'

So had to remove them pronto.

Peter - your patience with this is extremely appreciated and will hopefully help others in the future (when resolved!!!)
