MySQL 5.6 to 5.7 upgrade failure - service starts, then stops.

While performing an in-place upgrade from 5.6 to 5.7, I copied the files from mysql-5.7.26-winx64.zip to the installation folder of my existing mysql, C:\xampp\mysql
Overwrite went through fine, but attempting to start the mysql service afterward fails, with the error "The mysql service on local computer started and then stopped. Some services stop automatically if they are not in use by other services or programs"
Being unable to get the service to start back up, I cannot run the upgrade script.
