Clearing Existing Models

I feel foolish asking this, as it is probably one of those "Duh" questions, but how to I clear the scratch / tutorial models (EER diagrams, catalog, etc.) out of the workbench when I am finished playing with the Sakila database? I just want to "reset" the workbench back to a clean, empty slate with no models or schemas or catalogs or anything loaded so I can start fresh and import my SQL create script to start working on my database. For the life of me I can't figure out how to do this - no matter what I do, every time I restart workbench it has the damn Sakila database schema and catalog loaded. How do I get rid of it?
