To be upfront here. I don't normally use Workbench.
I can't find anywhere in Workbench to assign privileges for a schema.table, or schema.table.column
I tried adding privileges for schema.table and schema.table.column. They show in the list, but aren't reflected in the "Column Privileges" panel.

That said, using HeidiSQL I can assign privileges for a user down to column level, and then they show in that "column privileges" panel.
Maybe Workbench needs some work. :)
