Hello Mark,
you can enable the installation of MySQL 5.7 by editing the filters in MySQL Installer. When you're in the "Select Products and Features" window click the "Edit" button and set the "Maturity" field to "Other Releases", then click the "Filter" button to apply the changes. Finally, expand "MySql Server" in the "Available Products" section where you should see "MySQL 5.7" listed.
