Disregard the message above - I figured out that it was the fact that I'd turned GTID's off in my backup that was catching me out. Reran a recovery with an edited backup file with the GTID's included and the rebuilt node joined the cluster smoothly.
Now to figure out how I can exclude the default system entries from my backup file, while still holding onto the entries that are needed for user accounts etc.
