If you downloaded UnixODBC 2.3.7 from unixodbc.org it is only a source package, which means you need to build it first before installing.
The build process is very straight-forward using the autotools. The home page at unixodbc.org describes the process of building it. You can configure where to install the unixODBC libraries and executables.
