Regarding support for MySQL Server 5.7 - it reached End Of Life in October 2023 and new versions of Connectors do not support it.
For MySQL Server version 8.0 it should still be supported by the newest ODBC drivers. Our CI pipelines run tests against multiple server versions including 8.0. It looks like your usage scenario is not covered by our tests since we do not have failures against MySQL Server 8.0.
To resolve the situation with 8.0 support we would like to have a bug reported against Connector/ODBC 8.4/9.0. New bugs can be reported on the following URL:

The ideal case would be if the bug report had a test case/code/sequence of steps to allow us reproducing the problem in a consistent way.
