How to use € character between Windows and MySQL on Linux

Hi,

We have Windows client and we want to use MySQL on Red Hat. Our problem is using the best Character set to display and store French Characters like é,è,à and especially the € character.

My questions are :

what character set should we use on MySQL database
what character set should we declare in my.ini on the client side
