Setting ALL your charset variables to UTF8

1.- edit my.cnf

2.- add this line to [mysql] and [mysqld] sections in your conf file:
default-character-set=utf8

3.- Restart your MySQL server

4.- Check the results with a "show variables like '%char%';" command.
