which collation to choose? (danish and italian)

Hi
I am developing a website where the dynamic content retrieved from the database is in italian and danish
I have some chars that are badly displayed as "?" in place of the right characters as Ø etc, and also the standard italian chars èòàùì are not well displayed
which collation should I choose to make it work?
I see there are several collation referring to danish "latin_danis_ci" "ucs2_danish_ci" "utf8_danish_ci"...
which should I choose?
(for example I see that this database is displaying them in the right way....which collation is it running on? :D )
