OK sorry I did a mistake.
It was my base that was not correct (due to a strange bug/feature in PHP).

Now having a proper UTF-8 base to test with, I can say, for any one interested, that :

Navicat 7.4 :
properly handle and display UTF-8 chars ;

SQLyog 5.11 :
doesn't support UTF-8 chars dispite touting a "Complete support for MySQL 4.1" since June 2003, and "Complete support fo all MySQL 5.1" since December 2005 ... ;

MySQL-Front 3.2 :
properly handle and display UTF-8 chars ;

MySQL Developer Studio 1.51 :
properly handle and display UTF-8 chars ;

EMS SQL Manager 2005 Lite for MySQL :
doesn't support UTF-8 chars as EMS customer support center admitted, but dispite touting on its home page a "Support des versions MySQL de 3.23 à 5.06" ... ;

Aqua Data Studio 4.7 :
properly handle and display UTF-8 chars ;

Toad for MySQL 2.0 :
properly handle and display UTF-8 chars ;
