How to define specific "entities" of the requirement, eg an address, a customer, a sales item, a sales order, a refund, a shipper, a shipment &c. Most of which, as you notice, are collections. Then how to translate those "entities" into database entities eg columns, tables, triggers, partitions, queries, reports, databases. Some of which again are collections.

Not how to define "entity".
