Hey Ray,

this is indeed easy. First go to the settings Tools->Options and uncheck the box that says "load last active model at startup" (or similar). This will allow you to restart WB in a clean state. And whenever you want to start over just click the new tool button or use the menu to create a new model. This will close the old one (eventually asking you if you want to save your changes).
