Restoring databases from crashed server

I have several MySql databases on a CentOS server running cPanel. The server won't boot so I'm in disaster recover mode! I have a live CD patched in so that I can mount the old drives and move around the file system using SSH.

I have some cPanel backups which include the MySQL database backups but they are not that recent.

I can see the old file system, and I am able to copy files off the broken server, so my question is:

Is there a set of files that I can copy that will let me recreate each MySQL database on the new server (which is also running CentOS, cPanel and MySQL)?
