Hi Peter,
I tried your approach, deleted all files with "MySQL" in its filename. Then I dived into Regedit and searched for MySQL references. I deleted all I could.
After a reboot, I downloaded the MySQL Installer in order to install version 5.7.
But there it was again.... ;( The Installer continues saying that version 8.0 is installed and I am unable to do anything from this point.

I don't know where the installer gets this info, and I'm quite desperate now..
