Ok, so I guess I should have checked the log:

InnoDB: HugeTLB: Warning: Failed to allocate 6442467328 bytes. errno 22
InnoDB HugeTLB: Warning: Using conventional memory pool

RHEL is capping the amount I can allocate to huge pages to about 2.5GB. I just assumed it would use both. I guess it makes sense that it can't but I have 8GB RAM. Is it better to use 2.5GB buffer pool with huge page support or 6GB buffer pool without huge pages?
