Thanks to Mikael who was tremendously helpful in finding both the underlying problem and a solution, I am now able to do backups again. The solution for me was to run multithreaded backups. This is supposed to be the default, but for some reason my system was still running single threaded backups. I added "EnableMultithreadedBackup=1" to my config.ini, reloaded and did a rolling restart and was finally able to successfully create a backup after many months. I'll sleep better than I have in a long time after this.
