Hi Chris,

No tutorial per se, but http://dev.mysql.com/doc/refman/5.7/en/innodb-tablespace-encryption.html seems pretty usable.

I'd suggest you check if that works for you and file documentation bugs at bugs.mysql.com if there're things missing.

And we will look into providing more entry level material to http://mysqlserverteam.com/, so stay tuned :)
