I found a workaround, I'm not sure if this is the real fix but I'm going to share it with you:

my.cnf
utf8_unicode_ci -> utf8_general_ci

then
chown mysql:mysql /var/db/mysql/mysql_upgrade_info

Now mysql-server starts
