Now I know, that if the server starts and doesn't find an innodb-tablespace, it changes the variable have_innodb from YES to DISABLED. Then I must deinstall and install again the MySQL-server and restore my databases. I found an another way, without a new installation. I take a "new" tablespace from another MySQL-server, directly after a new installation, copy the innodb-tablespace to my defect data-directory, change owner, start the MySQL-server and run my restore-script. I am not sure, if it is a better way, but it is one :-)
