Si os referis a qué codificación utilizar para que el navegador muestre caracteres como las eñes y las vocales con tilde, utf-8 es válido (es unicode "simple"), aunque yo prefiero utilizar iso-8859-1


Dario, si tu problema es a la hora de mostrar los datos en un navegador, añade esta línea en la sección <head> de la página:

<meta http-equiv="content-Type" content="text/html; charset=iso-8859-1" />
