Al parecer el error que mencionas es debido a que en 8.0 el plugin de auntenticación por defecto es caching_sha2_password, en lugar de mysql_native_password.

Si no deseas usar este método, intenta cambiandolo por el uasdo anteriormente agregando la siguiente linea en tu archivo de configuración, en la sección [mysqld].

default_authentication_plugin=mysql_native_password

Tienes que reiniciar el servicio para que tome efecto.
