'Collation' is not a new column, it is a new attribute of your old columns.
COLLATE clause appeared in MySQL-4.1.
Most likely your previous host used an older version of MySQL,
so you didn't see these attributes.
Does your search engine get any errors from mysqld when sending queries?
Try to add some debug output.
