One big UPDATE that hits all the rows? Or one row at a time? Or chunked?

I don't know for sure, but I think there could be a significant difference in speed. ('Batched' INSERTs, for comparison, run 10 times as fast with a batch of 100 or more. I don't know about UPDATEs.)
