Does the log show any entries about "not safe...for row-based..."?

Can you find significant differences between i/o thread lag and sql thread lag?
I'm not sure exactly what differences you're asking about, but I can say that the i/o thread is reading from the master just fine, completely caught up. The sql thread is the one lagging. One interesting thing to note is that the Slave_SQL_Running_State on the 5.7 replica occasionally shows "System lock", which does not seem to happen on the 5.6 replica.

Do you have a replication test setup where you can benchmark a 5.7 primary replicating to a 5.7 replica?
No, but I will work on setting this up.
