You can run mysqldump without -u and without the -p. Include:

[mysqldump]
user="backup_usr"
password="backup_user_secret_pw"

in your my.cnf. This way mysqldump will not pass the username/password onto the process list, and will keep it hidden from snoopers. Just make sure you protect my.cnf at the filesystem level.
