Thanks. I had a look at the resource you pointed to and there was nothing in there that would indicate a problem. The user & host parts are properly quoted and we're not using net masks.
What adds to the puzzling nature of this is that I've just given grants to this same user in another database and after doing so, the user was able to see the table they'd been given access to (without requiring additional privs be granted).
