Hi,

Finally, running the query 'SHOW variables Like '%char%';' on the local server reveals:

character_set_client utf8
character_set_connection utf8
character_set_database utf8
character_set_filesystem binary
character_set_results utf8
character_set_server utf8
character_set_system utf8
character_sets_dir /usr/local/mysql-5.1.38-osx10.5-x86/share/charsets/


and on the remote server:

character_set_client utf8
character_set_connection utf8
character_set_database latin1
character_set_filesystem binary
character_set_results utf8
character_set_server latin1
character_set_system utf8
character_sets_dir /usr/share/mysql/charsets/


Running 'SHOW CREATE DATABASE `dbDixon100620`;' on the local server shows:

CREATE DATABASE `dbdixon100620` /*!40100 DEFAULT CHARACTER SET utf8 */

and on the remote server:

CREATE DATABASE `times_dbDixon` /*!40100 DEFAULT CHARACTER SET latin1 */


Also, the top of the dump file contains the following:
