text vs longtext

According to the docs, varchar, text and blob types all take up varying space depending on what's stored in them. If this is the case, then wouldn't the text and longtext types take up the same amount of space (give or take a byte) for a string that's, say, 3000 characters in length? If so, then why not just always use longtext?
